Chicken Tinola
Chicken Tinola is one of the most popular chicken soup recipes in the Philippines, and it’s not hard to see why. This chicken ginger stew has a simple yet delicious broth that makes you want more! It can be cooked with chicken meat and bones. Add some vegetables like chopped ginger, onion, green papaya or chayote(chokoes), and malunggay (moringa)for a healthy boost, so this super nutritious dish will give you enough energy for your day’s activities. It can be served with white rice or any other kind of starch. It’s usually eaten for lunch or dinner, but sometimes you’ll find people having chicken tinola as an appetizer before their meal! This chicken soup recipe is so good that you won’t want to stop eating it even when your tummy is full already…but don’t worry too much because it will only take a few minutes before another spoonful hits your taste buds again! Its delicious flavour while staying healthy at the same time!
Bulalo
Bulalo is a Filipino beef soup made from bone marrow and beef shanks. It’s one of the most popular soups in the Philippines and can be found in most restaurants. What makes bulalo so special is the unique flavour that the beef marrow gives to the soup. It’s a bit salty but incredibly delicious and comforting. This super sabaw has been around for a long time, and bulalo is often considered the Filipino counterpart to the Vietnamese Pho. This special bulalo soup is usually served with a side of kalamansi and fish sauce, but you can also add your spices or condiments for extra flavour. Filipinos often love to eat bulalo with steamed rice, but it’s also great on its own. So if you’re looking for an authentic Filipino soup to try, bulalo is the one to go for! It’s perfect for eating even the weather is hot, as it’s a very hearty and filling soup. And also for the winter months, as it’s a great way to warm up.
SINIGANG
Sinigang is a Filipino soup made with either pork or shrimp. The broth is sour but delicious and refreshing. It’s one of my favourite soups, and I could eat it every day! What makes sinigang so special is the unique flavour that the tamarind gives to the broth. The tamarind sourness is the perfect contrast to salty pork or shrimp, which provides the soup with a complex flavour.
Another thing that I love about sinigang is the variety of vegetables. You can add any vegetable you like – from spinach or kang-kong leaves and string beans (sitaw) to okra and water chestnuts (kastanyas). This gives the soup plenty of different textures and flavours, making it even more delicious and a favourite among Filipinos. So if you’re looking for a sour but tasty soup, give sinigang a try! It’s one of the most popular Filipino soups, and for a good reason – it’s delicious!
BEEF LAUYA
Beef lauya is beef brisket or shank slowly cooked in a ginger-based broth until fork tender. The soup is usually sayote or chayote, bokchoy, cabbage, and patis. Patis or fish sauce adds sourness and saltiness, while white rice makes beef lauya even more filling! This particular soup has Chinese origins but is adapted to the Filipino palate. Beef lauya, sometimes spelled as beef nilaga, which means beef stewed in broth or boiled beef, is a Filipino beef dish found on menus of most local restaurants. There are many variations of beef lauya, some using different cuts of meat and incorporating vegetables like cabbage, carrots, corn and string beans. But the most popular version is made with beef tripe, beef shank and beef flank. The combination of these beef cuts gives the soup its characteristic thick and rich broth, which is sour and savoury at the same time. One thing that makes beef lauya so delicious is the ginger-based broth. Ginger not only gives the soup a nice flavour but also has therapeutic properties, such as aiding in digestion and helping relieve nausea. Special beef lauya makes the Filipinos feel at home. This sour soup is perfect for those cold winter days or when you’re feeling sick and need some comfort food. So the next time you feel like having a sour soup, try beef lauya – you won’t be disappointed!
VEGETABLE SOUP/UTAN BISAYA
Soup is a big deal in the Philippines. There are so many different kinds of soup, and each one is packed with flavour and goodness. If you’re looking for a delicious, hearty soup that will warm your soul, you need to try vegetable soup or utan bisaya. What makes these soups so unique? First of all, they are made with fresh vegetables. Hearty & healthy vegetables such as string beans, eggplant, okra or ladies finger and bitter gourd plus some cuttlefish slices to add more texture and flavour (optional) that tastes so good that you can eat it on its own without any rice. This means that you get all the nutrients and fibre your body needs. Secondly, they’re flavoured with aromatic herbs and spices. This gives them an incredible depth of flavour, which is irresistible. Finally, both soups are simmered to allow the flavours to develop fully. Filipinos that live in the province used to cook this special soup as their main dish as all the ingredients are easily accessible- fresh from the backyard! So, if you’re looking for a delicious, healthy soup to warm your soul, give vegetable soup or utan bisaya a try! You won’t be disappointed. A dish that is easy to cook and can be enjoyed any time of the year.
CHICKEN MAMI/LOMI
One of the most popular Filipino soups is CHICKEN MAMI, a noodle soup made with chicken broth, egg noodles, and shredded chicken. What makes CHICKEN MAMI so delicious and loved by Filipinos? The answer lies in the unique combination of flavours and spices used to make this soup. In particular, garlic, onion, and soy sauce give CHICKEN MAMI the characteristic flavour profile that distinguishes it from other noodle soups. Additionally, adding fresh herbs such as cilantro or parsley (optional) can add an extra layer of flavour to this already delicious soup. Another famous Filipino soup is LOMI, a chicken and egg noodle soup. This soup gets its name from the Lomi noodles used to make it. These thin/thick egg noodles have a slightly chewy texture and are perfect for soaking up the broth’s flavour. Like CHICKEN MAMI, LOMI is also flavoured with garlic, onion, and soy sauce, as well as fresh herbs such as cilantro or parsley.
Additionally, some people like to add kalamansi( a type of citrus) or a bit of chilli oil to their bowl of chicken mami/lomi for an extra kick of heat or seasoning and scallions or green onions as a garnish. So if you’re looking for some delicious and authentic Filipino soups, be sure to try chicken mami and lomi! You won’t regret it!
